Pesto Cauliflower Pizza Recipe

In going gluten-free, dairy-free, and nightshade vegetable-free, I feared that many of my favourite foods would be gone forever, including pizza. A pizza crust has gluten, cheese is a dairy product, and the tomato sauce is made of tomatoes, a nightshade vegetable. But, I was fortunate to find a way to substitute for each. And I think the result is a superior pizza. To make an autoimmune-paleo friendly pizza, I upgrade its ingredients: The crust is replaced by a cauliflower crust. Nikujaga Recipe

I stumbled upon the inspiration for this recipe quite serendipitously. For some reason, we had purchased a bag of shirataki noodles. I found it in the fridge and wondered what to cook with it.  I noticed a recipe on the back for something called Nikujaga. Apparently it’s a japanese stew typically consisting of sliced beef, potatoes, onions, and shirataki noodles. Shirataki noodles are pretty awesome. Similar to ramen noodles, but made of yam, so they’re gluten-free and way less calories.  I have since cooked nikujaga over 100 times. It’s become a regular breakfast on weekends in our household. Gluten-free burgers/ Loco Moco

Last time I posted about a meatball recipe that didn’t go quite so well. So, I took another shot at it, but this time to make burgers or meat patties for a loco moco. The last time I posted about loco moco was before I figured out my dietary restrictions, so it had egg and gluten. Not this time! This time, making the burgers from scratch!
