I stumbled upon the inspiration for this recipe quite serendipitously. For some reason, we had purchased a bag of shirataki noodles. I found it in the fridge and wondered what to cook with it.  I noticed a recipe on the back for something called Nikujaga. Apparently it’s a japanese stew typically consisting of sliced beef, potatoes, onions, and shirataki noodles. Shirataki noodles are pretty awesome. Similar to ramen noodles, but made of yam, so they’re gluten-free and way less calories.  I have since cooked nikujaga over 100 times. It’s become a regular breakfast on weekends in our household.
